Betty (nee Wang) Tsai, 70, entered into eternal rest on Wednesday, February 28, 2024 at New York-Presbyterian/Columbia Hospital in New York, NY. Born in Taichung, Taiwan, she was daughter of the late Jai Chung and Shirley (nee Ma) Wang.

Always the stellar student, she graduated from Tunghai University in Taiwan in 1976 with a degree in English. In September of 1979, Betty joined hands in marriage with her beloved husband Chin "George" Tsai. Soon after they welcomed into this world their beautiful baby girl, Jennifer. In August of 1981, Betty and George left behind everything and everyone they knew in search of a better life arriving in the United States with two suitcases and $500 in their pockets. They left behind with family their only child, Jennifer, in order to pursue the American Dream. Betty obtained a Masters degree in Computer Science from Queens College in New York. Once settled and established their precious two and a half year old daughter arrived in the U.S. to join them on their journey.

Betty was extremely proud of her dedicated employment for 15 years for AT&T/Bell Labs in Basking Ridge, NJ, as she rose the ranks to become District Manager. She later worked in regulatory compliance for Johnson & Johnson in Irvine, CA and via several of the New Jersey locations. In 2007, Betty set out to become an entrepreneur, developing the Esporre/Melyann shoe brand which she grew on her own with great success. She had a love for shoes her whole life and grew a well-respected business from that interest. Those who have had the pleasure to work with Betty describe her as "fair, professional, honest and was very smart in every situation", "she was a great role model of hard work, devotion, and perseverance from which we all benefited greatly... her honesty and integrity were exemplary", "through all situations, she had dignity, self-respect, and creativity which made us respect her greatly". Betty's achievements embodied the American Dream she worked so hard to pursue.

Betty, her husband, and daughter lived in various locations including New York and Maryland, eventually settling in New Jersey. Before moving to Flemington, NJ in 1999, the family resided in Basking Ridge, North Plainfield, NJ, Somerset, NJ, and Hillsborough, NJ. Having lived close to 14 years in Flemington, Betty wanted to enjoy the California weather as she and her husband lived in Anaheim and Irvine for a few years. The birth of their first grandson brought them back to the East Coast, and after a few more years in Pennsylvania and Maryland, they settled back in the Flemington section of Raritan Township to be close to their two precious grandsons.

Betty loved cooking and her family loved eating her amazing creations. Betty also enjoyed finding and exploring new restaurants, shopping for clothes for her daughter and grandsons, and looking at real estate apps every day. Of the utmost importance was spending time making memories with her two adored grandsons. Betty would drop them off and pick them up at school, do homework with them, make them snacks and meals, and take them out to get pancakes at IHOP.

Betty leaves behind her beloved husband, Chin C. "George" Tsai with whom she had shared over forty-four years of marriage; her loving and devoted daughter and son-in-law, Jennifer P. Tsai-Long and Michael T. Long of Flemington; and a brother and sister. She will be deeply missed by her two cherished grandsons, Sean N. Long and Ryan G. Long; her nieces and nephews.
